The grapes are gently destemmed and crushed before alcoholic fermentation. During alcoholic fermentation, the must is subjected to numerous pumping-over and delestages to obtain an excellent phenolic extraction. Maceration lasts for about twenty-five days, after which the wine is racked off the skins and the maturation phase begins, which takes place in cement vats, barrels and oak barriques.
In the glass it shows an excellent consistency and is characterized by an impenetrable ruby colour. It is an intense and full-bodied wine with spicy notes of licorice and roasted coffee, accompanied by hints of cherry jam and fruit preserved in alcohol. In the mouth it is warm and soft, with sweet and velvety tannins that make the wine elegant and pleasant. The persistence is pronounced with an excellent coherence between the scents perceived on the nose and in the mouth and the retro-olfactory notes that recall those scents.
