The Merlot grapes are the first red grapes to be harvested. The grapes are immediately destemmed and gently crushed before being sent to alcoholic fermentation, which takes place in steel tanks at a temperature of between 22°C and 25°C. During alcoholic fermentation, the wine undergoes pumping over and punching down in order to promote better polyphenol extraction. Maceration lasts about twenty days, after which the wine is racked off and racked and matured in stainless steel tanks.
The Merlot has a bright ruby red colour. Its aromas are very typical and remind of ripe red fruit (cherry, plum, wild berries), red flowers with a subtle spicy note that gives complexity and breadth to the aromas. In the mouth it is warm and soft with smooth tannins and a structure that makes it a perfect match for meat dishes.
